When the ramen boom began in Chicago, Torino Ramen owners, Chika, Tomoko, and Chikako were greatly disappointed that unlike the authentic ramen they had grown up with in Tokyo and Osaka, the ramen being served here was either made from a commercial base or was missing the key ingredients of the real thing.
Armed with their knowledge of the Japanese food business and desire to share their food memories with the North Shore, they opened Torino Rame. "Tori (酉)" not only means chicken, the core of our Original Paitan broth, but it also refers to the Tori-no-ichi (酉の市) Festival, held each November in Japan, where business owners wish for good fortune.
Our ramen is not the dried brick of noodles you may have had in college for twenty-nine cents nor is it the commercial bouillon-based soup so common across the city. Our original broth is simmered for hours and days to bring out the rich, super-flavorful "umami" taste that will linger on your lips. All of our garnishes and side dishes are freshly made, by hand, and our noodles are always served at a toothsome al dente.
